I love hummus. Considering I’m not a huge bean fan, it is kind of amazing how big a hummus fan I have become. Part of what I love about it is how easy it is to make and how many different varieties and flavors you can create. I also love cilantro and am always looking for new ways to enjoy its unique flavor. A while back, I had been served a cilantro hummus at a friend’s house and really liked it. I tried and tried to recreate the recipe and it just wasn’t right. She finally clued me into the fact that it was actually jalapeno and cilantro hummus – I think she picked it up at Trader Joe’s.

I’m not a big jalapeno fan, so I played around with the amounts until I had it adjusted so that it had just the right amount of cilantro flavor and a little bit of kick that didn’t make my eyes water. You probably remember that I’ve been getting a weekly organic fruit and veggie box delivered by Door to Door Organics so I decided to make my own organic cilantro jalapeno hummus with their help.

I logged into my weekly box and added a few items from the shop: organic jalapeno peppers, organic cilantro, and organic garbanzo beans. I had the rest of the ingredients already. My box came a few days later and it took just a few minutes to whip up this amazing organic treat!! If you give it a try, stop back and let me know what you think! Cilantro Jalapeno Hummus

Ingredients

  • 2 16 oz cans garbanzo beans, rinsed well, drained, and patted dry
  • 1/3 cup extra virgin olive oil
  • juice of 2 limes
  • 4 cloves of garlic minced
  • 2 cups chopped cilantro
  • jalapeños remove the seeds and chop finely
  • 1/2 tsp salt

Instructions

  • Put all of the ingredients into a food processor and pulse until they are mixed and smooth.
  • Give it a taste and see if you might want to add more jalapeno (I don't like a lot of heat in mine).
  • Add more jalapeno if desired.
